
The Canarian sauce is, like the boiled potatoes, the most well – known product of the Canarian cooking outside the islands. It is a sauce made of oil and vinegar, with a garlic, parsley and pepper grind. There are over 20 varieties though, in all the cases, counts on the special touch of the cooker; it is outstanding the spicy sauce, or the Palmero one, different kinds of green sauce, made of coriander, pepper and parsley, and also sauce cheese. It is served into a bowl so that each diner guest can take it individually and it is important to prepare the meat stew, fish foods and potatoe.
